Honey is one of the oldest foods on earth — and Greece has been producing some of the world's finest for over 4,000 years. But not all honey is created equal. What is Raw Honey?

Raw honey is honey that has not been heated above the natural temperature of a beehive (around 35°C / 95°F) and has not been ultra-filtered. Most commercial honey is pasteurized (heated to 70°C+) to prevent crystallization and extend shelf life. The result is a clear, smooth product that looks appealing but has lost much of its nutritional complexity.

Types of Greek Honey

Thyme Honey

It's one of the most antioxidant-rich honeys in the world and has been prized since antiquity. Crystallizes slowly and has a firm, grainy texture when it does.

Pine Honey

Unique to Greece and a few other Mediterranean countries, pine honey is produced not from flower nectar but from the secretions of insects living on pine trees. It has a lower sugar content than floral honeys, a distinctive resinous flavor, and exceptionally high mineral content. It's less sweet than thyme honey and beloved by those who prefer a more complex, savory profile.

Wildflower (Polyfloral) Honey

Produced from the nectar of many different wildflowers, this honey varies by season and region. It tends to be lighter in color and flavor than thyme honey, with a gentle sweetness and floral aroma. A wonderful everyday honey for tea, yogurt, and baking.

Fir Honey

Similar to pine honey in that it comes from tree secretions rather than flower nectar. Produced in the mountainous regions of central Greece, fir honey is dark, rich, and intensely flavored with a low glycemic index compared to most honeys.
